Only if you specifically ask, or if you already have a site built in one and want to keep it. Left to our own devices we build custom blocks instead, because the performance difference is significant.
What happens if a WordPress update breaks my site?
On a maintenance plan, updates run on a staging copy first and only go live once we have checked them. That is precisely the failure mode maintenance exists to prevent.
